Maple Glazed Pumpkin Muffins
I saw this recipe on the Skinnytaste website.
And well, it's pumpkin season! So decided to try it.
Josh and I both agreed that they needed
something more when they were done.
So I made a maple glaze for them...and made them not skinny.
Ingediants
1 1/4 cup flour
3/4 cup sugar
3/4 tsp baking soda
1 3/4 tsp pumpkin pie spice
1/4 tsp cinnamon
1/4 tsp salt
1 1/2 cup canned pumpkin puree
2 Tbsp canola oil
2 egg whites
2 tsp vanilla
baking spray (The one with flour in it)
2/3 cup mini chocolate chips
Glaze
1 cup powdered sugar
1 cup powdered sugar
1/2 cup syrup
1/2 stick butter
Directions
Preheat oven to 350 degrees.
Spray mini cupcake pan with baking spray.
In mixer combine pumpkin puree, oil, egg whites and vanilla. Mix on medium speed until combined.
In a medium bowl combine flour, sugar, baking soda, pumpkin spice and salt.
Add flour mixture to the wet mixture and blend until combined.
Add chocolate chips.
Pour batter into muffin tin and bake for 20-24 minutes or until you insert
a toothpick in the muffin and it comes out clean.
Let cool on a cooling rack for at least 10 minutes.
Meanwhile make the gaze. Melt butter in the microwave.
Add syrup and powdered sugar, mix.
Once muffins are cooled dip each muffin into the glaze.
Let harden and then enjoy!
