White Chicken Chili

White Chicken Chili
I found this recipe on pinterest and modified it 
a little. 

Ingredients
1 Lb chicken breast
1 yellow onion diced
2 cloves garlic minced
24 oz chicken broth
2 cans of 15 oz northern white beans drained and rinsed
1 can of 15 oz corn
2 cans 4 oz diced green chilies
Salt & Pepper
1 tsp cumin
3/4 tsp oregeno
1 tsp chili powder
1/4 tsp cayenne
1 bunch cilantro chopped (Some saved for toppings)
4 oz cream cheese
1/4 half and half

Toppings
Shredded mexican cheese
Sour cream
Tortilla strips
Fried onions
Cilantro-chopped

Other toppings I didn't use but would be good
Avocado
Jalapeno

Directions

Poach the chicken by adding the chicken breast to a medium sauce pan and fill it up with water until the water covers the chicken. Boil until cooked through, about a half hour. Once cooked through shred chicken with 2 forks. 
Meanwhile, in a large pot saute onion in about 2 tablespoons of olive oil for about 5 minutes until translucent. Add beans, corn, garlic and green chilies. Sauce for a few minutes. Add chili powder, cumin, oregano, cayenne, cilantro, salt and pepper. Add cream cheese mix until melted. Add chicken broth and half and half. Bring to a boil and than lower heat and simmer for 45-60 minutes. 
Serve with toppings of your choice.
