Fall Spinach Chicken Salad
This is such a delicious fall salad. I got this recipe from a lady I used to work with. Potlucks give you the best recipes.
Ingredients
Fresh Spinach
1 Gala apple- Chopped
Crumbled Feta
2 chicken breasts
2 Tbsp Morton's Nature Seasonings
Olive Oil
Dried cranberries
Crutons
Candied Pecans (You can find them in the bulk section of the grocery story...Buy a little extra because you won't be able to stop snacking on them)
Creamy Balsamic Vinaigrette
4 Cloves minced Garlic
3 Tbsp mayo
2 Tbsp lemon juice
2 Tbsp sugar
1 Tbsp Dijon mustard
2 tsp Morton's Nature Seasoning
1 1/2 tsp salt
1/4 cup balsamic vinegar
3/4 cup olive oil
Directions
Assemble vinaigrette by adding all the ingredients in a mason jar and shake until mixed.
To make the chicken, cut into strips and season with the Morton's Nature Seasoning. Heat a few tablespoons of olive oil in a large skillet. Add chicken and cook for 3-5 minutes on each side until cooked through. Remove from heat and let sit for a few minutes. Chop into bite size pieces.
Assemble salad by putting spinach in a bowl with feta, apples, cranberries, pecans, croutons and chicken. Drizzle with desired amount of dressing.
