Chorizo Stuffed Poblano Peppers



Ingredients
1 pound ground chorizo
5-6 poblano peppers-sliced in half and seeded
4 servings of white rice cooked according to package
1 can black beans drained and rinsed
1 can corn drained
1/2 pint cherry tomatoes diced
8 oz cream cheese
1-2 cups shredded cheddar cheese

Directions
Pre heat oven to 375 degrees. 
Brown chorizo in a skillet breaking it apart as it cooks.  Once cooked through add rice, black beans, corn, cherry tomatoes. Heat through and add cream cheese a keep mixing until the cream cheese is melted. 
Add mixture to the poblano peppers and put in a 9x13 baking dish. 
Bake for 40 minutes. Add shredded cheese and bake for another 10 minutes. 
Let cool slightly before eating.
