Sausage, Kale & Cauliflower Soup
I love homemade soups. This is my favorite and probably one of the only "recipes" I can make completely by memory.
I got this from my mother-in-law and it's become a staple
in our house.
Ingredients
-4 strips of bacon chopped into small pieces
-1 lb of Hot Italian sausage
-1 onion
-2 cloves of garlic, minced
-1 bunch of kale-About 3-4 cups chopped small
-16 oz chicken broth (I use Better Than Bouillon chicken base)
-1 quart water
-1 cup heavy cream
-3-4 red potatoes (skins on) chopped small
-1 medium sized head of cauliflower chopped small
Instructions
Add chopped bacon to a large sauce pan, brown. Do not pour out bacon grease.
Add chopped onion and soften for a few minutes with the bacon and bacon grease. Once softened, add sausage, breaking it up while it browns.
Add potatoes and cauliflower and mix around.
Add chicken broth, water and heavy cream. Let boil for about 10-15 minutes until potatoes are cooked through. Add chopped kale. Let cook for another 10 minutes until kale is wilted. Season with salt and pepper. Serve with crackers.
