Dry Rub Chicken Wings & Blue Cheese Dressing

Dry Rub Chicken Wings & Blue Cheese Dressing

I was trying to find a recipe for a dry rub chicken wing
that would remind me of the wings at Chicken Lips in Wisconsin.
These were pretty darn delicious--But not the same flavors of the
wings at Chicken Lips.
I found the recipe for both the wings and dressing on pinterest.
She called them the spice cabinet wings---Yes she was right, lots of different seasonings.

Ingredients
*note I didn't actually measure exactly, I went off her recipe and then eyeballed it*
  • 2 Lbs chicken wings
  • 2 Tablespoons olive oil
  • 1 Tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon Hungarian sweet paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 teaspoon dried ancho chili pepper
  • 1 teaspoon dried mustard
  • 1/2 teaspoon cinnamon
  • 2 teaspoon dried oregano
  • 1 teaspoon dried, crushed rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 teaspoon dark brown sugar
  • 1 teaspoon coarse kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried red pepper flake

Celery sticks for serving

Blue Cheese Dressing:

  • 1/3 cup milk
  • 1 tsp white vinegar
  • 5 ounces blue cheese , crumbled
  • 1/3 cup  sour cream
  • 1/4 cup mayonnaise
  • 4 tsp white balsamic vinegar
  • 1 tsp granulated white sugar
  • 2 cloves minced garlic
  • Salt & Pepper

Directions
Make blue cheese dressing first so it can sit for a little bit. Combine milk and vinegar. Let sit for a few minutes. Add blue cheese crumbles and mash with a fork until broken up pretty well. Add the rest of the ingredients and mix well. Refrigerate until ready to use.

Pre heat oven to 350. Line baking sheet with tin foil and spray with a little bit of baking spray. Put pan in oven to warm up while you make the wings. Pat wings dry with a paper towel. Mix all of the seasonings in a small bowl.
Toss wings in a large bowl with the seasonings and olive oil. Let stand for 15 minutes.
Remove pan from oven and place wings on the pan, making sure not to crowd them or they won't get crispy.
Bake for 10 minutes, turn over, bake for another 10 minutes.
Turn on broiler and broil for a few minutes, turn over and broil for another few minutes. Make sure to watch them so they don't burn but also broil them long enough they get crispy.
Serve them with the blue cheese dressing and celery.
