Pesto Pizza with Tomato Basil Salad
I've been trying to find recipes to cook
that are vegetarian at least once a week.
I had recently bought the pesto from Costco
and was looking for something to make with it
and stumbled upon this recipe on the Pioneer Women's website.
It was so delicious. Also, if you don't think you like goat cheese, just try it.
It gives it such a creamy, salty flavor.
Ingredients
1 package of pre-made pizza crust-I used a thin crust in a tube
Cornmeal for dusting pan
1/4 cup store bought pesto
5-7 cloves garlic
3 Tablespoons olive oil
2 cups shredded mozzarella cheese
2 oz goat cheese-crumbled
1 pint cherry tomatoes
1 bunch of fresh basil
2 Tablespoons balsamic vinegar
Salt & Pepper
Directions
Pre heat oven to 500 degrees.
Prepare tomato salad by adding chopped garlic to a sauce pan with the olive oil and heating through for about a minute. Remove from heat and place in a bowl to let it cool. Then cut the cherry tomatoes into quarters and put in a medium sized bowl. Add basil chopped, balsamic vinegar, salt and pepper to taste and the garlic and olive oil mixture.
Sprinkle large baking sheet with cornmeal.
Lay pizza crust across the pan. Spread the pesto on top of the crust.
Add mozzarella and goat cheese and bake for 12-15 minutes.
Once pizza is golden brown and bubbly it is ready! Check on it every so often so it doesn't burn.
Add tomato basil salad immediately on top once it's removed from the oven.
Cut and serve.
