Sweet Potato Rounds
So every year at my immediate family Christmas we have an appetizer cook off
between my siblings and our spouses. And well, I came in 2nd this year
with crab stuffed jalapeno poppers. This year my sister in law Kelly won with this recipe. It was pretty amazing. I gave it a 10 out of 10.
Ingredients
2 medium sweet potatoes
1 box Boursin Garlic and Herb Cheese (5.2 oz)
1/2 cup dried cranberries- chopped
1/2 cup walnuts-chopped
Honey for drizzling
Directions
Preheat oven to 400 degrees. Wash sweet potatoes and slice into 1/4 inch rounds. Spray a baking sheet with olive oil spray. Place sweet potato rounds in a single layer on the baking sheet. Spray with a light mist of olive oil spray. Roast until golden, about 20 minutes. Let cool for 5 minutes.
Spread a generous amount of the Boursin cheese on the sweet potato. Top with a sprinkle of cranberries and walnuts. Drizzle with honey.
