Kielbasa & Bean Soup
After Lena was born our friends brought us some delicious soup
for lunch one day and I happened to be scrolling through Pinterest saw a soup that looked like the soup they brought us. I ended up combining 2 different recipes to make this soup. It makes a large pot. I froze so much of it.
Ingredients
1 Tbsp olive oil
2 packages of Kielbasa-Sliced in half and then pieces
3 clove garlic-chopped
1 yellow onion-diced
2 carrots-diced
2 stalks celery-diced
1 potato-diced small
1 red pepper-diced
1 can white beans-drained and rinsed
1/2 tsp dried oregano
2 bay leaves
6 cups chicken stock
salt and pepper
3 cups fresh spinach-chopped
Directions
In a large pot heat olive oil and add diced kielbasa and cook for around 5 minutes until browned. Add garlic, onion, carrots, celery, potato, red pepper and white beans. Cook for another 7-10 minutes. Add chicken stock, oregano, bay leave and a little salt and pepper. Cook until the potatoes are fork tender. About 20 minutes. Add the fresh spinach and cook for around 3-5 minutes until the spinach cooks down a little bit. Serve in a bowl and enjoy!
