Prosciutto Wrapped Stuffed Chicken Breast
This recipe is from Chrissy Teigen's cookbook called Cravings.
Her whole cookbook is delicious but this is one of my favorites.
The recipe calls for making your own garlic herb cheese but I just buy the premade boursin garlic and herb cheese.
Ingredients
5.2 oz package herb and garlic Boursin soft cheese
4 pieces of bacon-chopped in to small pieces
4 small chicken breasts
8 slices of prosciutto
2 Tbsp olive oil
1 pint cherry tomatoes
4-5 sprigs of fresh thyme
Salt & Pepper
Directions
Preheat oven to 350 degrees.
In a large cast iron skillet cook the bacon pieces until crispy. Remove bacon from skillet to a small bowl lined with paper towel. Pour out excess fat from skillet leaving enough to coat the pan.
Place each piece of chicken on a cutting board and lay a piece of plastic wrap on top and use a mallet or skillet to pound chicken into an even 1/2 inch thickness. (I use Josh's rubber mallet). Repeat with remaining chicken breast.
Sprinkle each piece of chicken with salt and pepper. Spread each chicken breast with about 2 Tbsp of the boursin cheese and a 4th of the bacon pieces. Roll up each chicken breast from the short side. Wrap each roll with 2 slices of prosciutto. Place chicken in the cast iron skillet, seam side down. Drizzle with olive oil and sprinkle with salt and pepper. Scatter the tomatoes around the chicken. Throw in the sprigs of thyme. Bake until the chicken is cooked through. About 30-40 minutes. Let the chicken cool for a few minutes before serving.
