Rhubarb Mojito

I swear I don't ONLY eat rhubarb. But this time of the year I get it in as much as possible. This is a mixture of a mojito and moscow mule. I prepared the rhubarb simple syrup the night before and refrigerated it over night. 

Rhubarb Simple Syrup 
-3 stalks of rhubarb thinly sliced
-1 1/2 cup water
-1 cup sugar

Boil the ingredients above for 10-15 minutes stirring occasionally. 
Transfer to a bowl, cover and refrigerate until chilled. 

To assemble drink 
In a glass combine 4-5 mint leaves, the juice of half a lime and one shot of vodka. Muddle together. Add 4 tablespoons of the above rhubarb simple syrup.
Fill glass with ice and top with ginger beer.
