Asian Pork Bowl
I found this recipe on Pinterest and it was not only super easy but so flavorful!
I prepared the meat and cucumber the night before and was able to just put the crock back in the crockpot the next morning making assembly after work under 5 minutes.
Ingredients:
-3-4lb pork roast
-1-2 Tbsp olive oil
-1/2 cup soy sauce
-1/3 brown sugar
-1/4 cup chili garlic paste (Found in the Asian aisle)
-2 Tbsp hoisin sauce(Also found in the Asian aisle)
Cucumbers:
-1 seedless cucumber-Sliced thinly
-1 Tbsp rice vinegar
-1 Tsp chili garlic paste
-1 Tbsp toasted sesame oil
-1 Tbsp of sugar
-White rice-prepared according to package
-cilantro
-sesame seeds
Instructions:
Heat oil in a skillet on high. Season roast with salt and pepper. Brown meat for 3-4 minutes on each side just giving it a nice sear.
Meanwhile, in the bottom of the crock pot mix together the soy sauce, brown sugar, chilli garlic paste, and hoisin. Once the meat is seared on both sides add it to the sauce in the crockpot, turning once to coat in the sauce. Cook on low for 8-10 hours.
Cucumbers:
I marinated these the night before. Mix cucumber, rice vinegar, chili garlic paste, toasted sesame oil and sugar. Cover and refrigerate until ready to use.
Shred the meat, adding some of the extra sauce in the crockpot if needed and serve with rice, cilantro, cucumber and sesame seeds.
