Fish Tacos
Fish Tacos
Made these fish tacos I found on Pinterest for dinner on Friday night. We sat
on the deck with a Moscow mule and ate them. It was perfect.
This is enough for about 4 tacos
Tilapia:
- 2-3 pieces of Tilapia
-2 tsp paprika
-1/2 tsp cayenne (Little extra if you like it spicy)
-1 tsp garlic powder
-1 tsp cumin
-2 Tbsp canola oil
Cabbage slaw:
-3 cups coleslaw mix
-1/2 cup chopped cilantro
-3 green onions chopped
-3 Tbsp white vinegar
-1 clove garlic-minced
-1 tsp salt
-2 tsp sugar
Sour Cream:
-1/3 cup sour cream
-3 Tbsp mayo
-Juice & zest of lime
-salt to taste
-Warmed tortillas
-Sliced avocado
Instructions:
Mix ingredients for both cabbage slaw and sour cream. Refrigerate while you cook the tilapia.
Season fish with salt and pepper on both sides. Heat oil in cast iron skillet. Mix paprika, cayenne, garlic powder and cumin in a small bowl. Rub both sides of tilapia with seasoning mix. Once skillet is hot add tilapia. Cook on each side for 3-4 minutes.
Assemble taco with tortilla, avocado, 1/2 piece of tilapia, cabbage slaw and stop with the sour cream mixture.
