Slow Cooker Pulled Pork Sliders
I got this recipe from my mother in law a long time ago.
It is such a easy weeknight recipe that you
just throw into the crock pot in the morning or a perfect recipe for a party.
Ingredients
Pork
1/2 cup apricot preserves
1 Tablespoon cider vinegar
1 red onion-thinly sliced
2-3 lb pork roast
2 teaspoon ground cumin
Salt & Pepper
Pickled Red Onion
1 red onion-sliced
3 Tablespoon apple cider vinegar
2 Tablespoons sugar
1/2 teaspoon salt
1/4 cup water

1/4 cup water
Slider Rolls
Lettuce
Mayo
Directions
In a slow cooker whisk together the apricot preserves, cider
vinegar and sliced red onion. Season the pork with cumin, 1/2 teaspoon salt and pepper each. Nestle the pork in the onions. Cover and let cook on low for 8 hours or low for 6.
Make the pickled onions by adding all the ingredients other than the onion and whisk until sugar and salt are dissolved. Add the sliced red onion. Refrigerate for at least a half hour or make the day before.
Once the pork in done shred in the crock pot with two forks and mix with the juices and onion.
Assemble sandwiches with a layer of mayo, pork, pickled onions and lettuce on the slider rolls.
