Garlic & Caper Pasta
This is a one pot recipe and took me about 20 minutes to
make and was packed with flavor.
I got this recipe from my sister-in-law.
The recipe below will call for panko breadcrumbs
but you'll see in my picture I made breadcrumbs because I was
out of them. You will be able to whip this recipe up so quick after work.
There is truly nothing better than garlic and capers.
Ingredients
1/4 cup olive oil
6-8 cloves of garlic-thinly sliced
One 3.5 oz jar of capers (including brine)
1/2 jalapeno- seeds removed & finely diced
Fresh Thyme
4 cups Chicken Broth
1/2 cup Water
1 lb thin spaghetti
Salt & Pepper
Panko Breadcrumbs for garnish
Directions
In a large skillet over medium heat warm the olive oil. Add the garlic and cook until lightly brown, a few minutes. Then add the jalapeno, capers, brine and 1 tablespoon of fresh thyme. Then add the chicken broth, water and spaghetti. Cook until the pasta is tender and the sauce has thickened-about 12-14 minutes. Season with salt and pepper. Serve the pasta in a shallow bowl and garnish with more fresh thyme and panko.
