Penne Rosa
If you have ever been to Noodles & Co. you've probably had penne rosa.
It's so delicious. This is a copy cat recipe I found online
years ago and it's pretty spot on to what you would find at the restaurant.
Ingredients
1/2 lb penne pasta
2 Tbsp olive oil
1 cup marinara sauce
1/2 cup heavy cream
1 bunch green onions-chopped
3 cloves garlic-chopped
Crush red chili peppers
1/2 cup mushrooms-sliced
1/2 cup fresh baby spinach leaves-chopped
1 14oz can Italian style tomatoes
1 bunch fresh basil-chopped
Crumbled feta
Directions
Cook pasta according to the package, drain and toss with a small amount of olive oil. In a large skillet heat 2 Tbsp of olive oil add mushrooms and a pinch of salt. Saute until the mushrooms are tender. Add garlic and green onions and cook for another minute. Add tomatoes, marinara, chili flakes, and cream. Stir to combine. Add pasta until coated. Fold in spinach until wilted. Serve in a bowl topped with the chopped fresh basil and crumbled feta.
