Cuban Pulled Pork Sandwich with Caramelized Onion and Thyme Mayo

You should probably make this. It was so damn delicious. 
A little planning needs to be done because the pork needs 
to marinate at least 8 hours and up to 24 hours. Then thrown in the crock pot to cook all day. 
This recipe is also from the cookbook called 
Eating In The Middle by Andie Mitchell. The ingredient list looks daunting but this recipe is actually pretty easy.   


Ingredients
Marinade
2 cups orange juice
2 Tbsp dark rum
2 Tbsp fresh lime juice (1 lime)
3 cloves garlic-chopped
2 Tbsp fresh oregano-chopped

Pork
2 lb pork shoulder
3 Tbsp orange juice
2 Tbsp fresh thyme-chopped
2 Tbsp fresh oregano-chopped
1 Tbsp ground cumin
1/2 tsp salt
1/2 tsp pepper
1 Tbsp olive oil

Thyme Mayo
2 cloves garlic-chopped
pinch of salt & pepper
1 Tbsp fresh lime juice
1/2 cup mayo
2 tsp fresh thyme-chopped

Caramelized Onions
2 medium yellow onion-thinly sliced
2 tsp sugar
2 Tbsp butter
2 Tbsp olive oil
pinch of salt

For the sandwich
Soft bakery buns
Softened butter
1/2 cup fresh cilantro-chopped

Directions
For the marinate combine all ingredients for the marinate. Cut 1 inch deep slits all over the pork and place in a container that had a lid. Pour the marinade over the top, cover and refrigerate over night, for at least 8 hours or up to 24 hours. 
Remove roast from refrigerator and place in a crock pot. Top with 1/2 cup of the marinade and discard the rest. In another bowl mix together the orange juice, garlic, thyme, oregeno, cumin, 1/2 tsp salt, pepper and oil until smooth. Top the pork with this mixture. Cook on low for at least 8 hours until pork is tender. Using two forks shred the pork. 
For the caramelized onions in a large skillet heat olive oil and butter. Add onions stirring occasionally until soft, about 10 minutes. Add the sugar and salt and cook stirring occasionally until the onion is deep golden brown, about 12 minutes. If the onion starts to burn add a tablespoon of water to the pan on at a time. Meanwhile, mix all the ingredients for the mayo, this can be done hours in advance-it will only make it more flavorful. 
To assemble the sandwich preheat the broiler on the oven. Slice open the buns and butter them. Place them on a baking sheet and put the in the oven under the broiler until just browned. It only takes a few minute and will happen quickly. Top the toasted buns with mayo, shredded pork, caramelized onions and cilantro.
