Grilled Romaine Caesar Salad with Chicken
I had my first grilled salad a few months ago and I've been
wanting to recreate it since.
Grilling the lettuce gives it a whole new flavor.
I made this on the stove and can easily be done on the grill exactly the same.
Ingredients
2 heads of romaine lettuce
Croutons-chopped into smaller pieces
Shredded Parmesan cheese
Store bought Caesar dressing-I prefer one from the refrigerator section
4 pepperoncini peppers- chopped
2 chicken breast
2 Tbsp olive oil
1 Tbsp truffle oil (you can omit this)
2 Tbsp minced garlic
Salt & Pepper
Zest of 1 lemon
Directions
Heat a large skillet over medium heat with olive oil and truffle oil . Meanwhile, slice the chicken length wise to make the chicken thinner. Sprinkle with salt & pepper, zest of lemon and minced garlic. Once the skillet it hot add the chicken, cover and cook until no longer pink. About 4-6 minutes per side. Meanwhile, cut the romaine lengthwise without removing the base so it stays together. Drizzle with olive oil and season with salt and pepper. Heat a grill pan over high heat. Once very hot, lay the romaine on the grill pan and grill for about 3-4 minutes per side until charred. To assemble the salad slice the chicken in to strips. Lay the romaine on a plate and top with the chopped croutons, chopped pepperoncini peppers, shredded Parmesan and drizzle with Caesar dressing and serve with the sliced chicken.
