Curried Chicken Salad Wrap
This recipe is from Giada de Laurentiis cookbook called Giadas Feel Good Food.
I've been trying to find recipes that are a bit more healthy.
I've had this cookbook forever and picked it up again. I'm so glad
I did. This recipe was so delicious. It takes a normal chicken salad recipe to a
whole new level with the curry powder. Her cookbook states there is 353 calories in each wrap. I served with frozen sweet potato waffle fries and a garlic truffle oil aioli.
Ingrediants
1/4 cup mango chutney (I couldn't find this but found fresh mango salsa and worked just as well)
1-5.3oz container plain greek yogurt
Olive oil
2 tsp fresh lime juice-about 1 large lime
Salt & Pepper
2 chicken breast-about 1 lb of chicken
1 can chickpeas-drained and rinsed and chopped
1 small head of romaine lettuce-chopped
1 Gala apple-chopped into bite sized pieces
4 oz fresh goat cheese
1/2 cup green onions-chopped (white and green parts)
1/4 cup fresh mint-chopped
2 Tbsp raisins
Few dashes of hot sauce
Large tortilla wraps (Multigrain if you can find them)
Directions
First make the chicken by heating a large skillet over medium-high heat with 2 Tbsp of olive oil. Slice the chicken lengthwise to make the breast thinner. Once the pan is hot, place the chicken in a skillet and season with salt and pepper. Cover and cook for about 4-6 minutes each side until the chicken is browned and cooked through. Remove chicken from the skillet and let cook completely. Meanwhile prepare the rest of the ingredients as listed above and place in a large bowl except for the lettuce and tortilla. Once you have all the ingredients prepped and in the bowl, dice the chicken into bite sized pieces and place in the bowl with all the other ingredients. To assemble warm the tortillas in the microwave for a few seconds so they are pliable. Place a large spoonful of the chicken salad on the tortilla and top with chopped lettuce. Fold up like a burrito and cut in half.
