Steak Tacos with Nectarine Salsa
I'm back...After a long break of blogging
my recipes I realized how much I missed having
a place with all my favorite things to cook.
AND this is my 100th recipe on my blog and its a good one!
I got this recipe from Rachael Ray Magazine.
Ingredients
3 nectarines-pits removed & diced
1 bunch of cilantro-chopped
1/2 red onion-diced
1 jalapeno-seeds removed & diced
Zest and juice from 1 lime
1 Tablespoon chili powder
1 teaspoon paprika
2-3 lbs steak (I used a thin cut rib eye)
Tortillas (Corn or flour)
Crumbled Feta
Salt & Pepper
Directions
To make salsa combine nectarines, cilantro, red onion, jalapeno, zest & juice of lime and season with salt and pepper.
Preheat grill to medium. In a small bowl mix chili powder, paprika 1 1/2 teaspoon salt and 1 teaspoon pepper.
Pat the steaks dry and rub the seasoning mix on both sides of the steaks.
Grill steaks until the steaks are cooked to your desired doneness. Meanwhile, place tortillas on the grill to heat through. About 30 seconds each side.
Remove from the steaks from grill and let rest for 3-5 minutes. Thinly slice the steaks.
Assemble the tacos with steak, salsa and feta.
