Honey Mustard Salmon
I found this recipe on pinterest and made it for my parents when they brought us lemons they had picked while in Arizona. It was delicious!
Ingrediants
Four 6 oz fillets of salmon (I know there is 5 in the picture above)
2 Tbsp Dijon mustard
2 Tbsp honey
1 clove garlic minced
1 cup panko breadcrumbs
2 Tbsp parsley (Dried or fresh)
zest of 2 lemons
3 lemons-thinly sliced
2 Tbsp olive oil
Salt & Pepper
Directions
Preheat oven to 400 degrees. Line a baking sheet with tin foil and spray with cooking spray. In a small bowl mix together mustard, honey and garlic. In another bowl mix together breadcrumbs, parsley and zest. Lay salmon on the baking sheet and drizzle salmon with olive oil. Brush salmon with mustard mix and sprinkle with salt and pepper. Next, top with breadcrumb mixture. Add the sliced lemons to the pan around the salmon. Bake for 13-15 minutes until the salmon is cooked through. I turned the broiler on for a few minutes at the end to make the breadcrumbs extra crispy. Serve with a squeeze of the roasted lemons.
