Sausage Tortellini

Sausage Tortellini 

I got this recipe from my brother Michael and sister in law Kelly. 
I'm pretty sure it's become a staple not only in our house but their house too. 
The colors are so beautiful and so flavorful. Its one of those recipes like
lasagna that sometimes is even better the next day. 


Ingrediants
1 Lb ground spicy sausage
1 16 oz bag frozen cheese tortellini
1 pint cherry tomatoes-halved
1 bag of fresh spinach
1/2 red onion-diced
1 medium red pepper-diced
1 medium green pepper-diced
1/2 cup shredded Parmesan cheese
2 Tbsp Italian seasoning
3 Tbsp water
3 Tbsp olive oil
4 Tbsp butter
salt & pepper

Directions
Preheat oven to 400 degrees
Start by browning the sausage in a large skillet, breaking it up as it cooks. 
Meanwhile prepare all the vegetables as listed above.
To assemble, in a large bowl mix all the ingredients. (Find the biggest bowl you can...it's a lot to mix) Next, spray a 9x13 baking dish with cooking spray. Add the mixture to the baking dish and cover with foil. Bake for 30 minutes covered. Remove the foil and stir. Bake for an additional 20 minutes uncovered.
