Miso Chicken
Miso Chicken
I found this recipe on pinterest.
We ate it with a baked potato but would also be good
served with rice. It was super easy and super delicious.
Ingredients
Bone in chicken of your choice I used 5 drummies and 2 breasts
4 Tbsp butter-Softened
1/2 cup white miso
3 Tbsp maple syrup
2 Tbsp fresh grated ginger
8 cloves garlic peeled
1 Tbsp rice vinegar
Black Pepper
4 Scallions-Green and light green parts-chopped
Directions
Preheat oven to 400 degrees. Combine butter, miso, maple syrup, ginger, black pepper.
Place the chicken in a single layer in a roasting pan or heavy oven-proof skillet, I used a cast iron skillet.
Massage all of the miso butter mixture all over the chicken under the skin if there is any. Add garlic cloves to the skillet or pan. Roast for 30-40 minutes or until skin in golden and juices are running clear. Basting at least once if not twice during that time. Mash the garlic into the sauce in the pan. Sprinkle chicken with scallions and serve with the sauce!
