Strawberry Rhubarb Salsa


Spring is one of my favorite times of the year, why?
One word, rhubarb.
This is one of my favorite recipes and one of my
most asked for recipes. It's so good.

I'm doing this last minute before it disappeared so sorry
for the phone pictures rather than good quality pictures.
But, a poor quality picture doesn't change the quality
of this amazing recipe.




INGREDIENTS STRAWBERRY RHUBARB SALSA


-2 cups of rhubarb roughly chopped (it will cook down) 
-1 cup sugar
-¾ cup water
-1 to 2 bunch of cilantro (I like a lot)
-zest and juice of 1 lime
-2 cups of strawberries
-1 shallot chopped
-1 serrano chili chopped

-sea salt




Bring sugar and water to a boil over medium high heat. Stir gently to dissolve sugar. Once sugar is dissolved add rhubarb, strawberries, lime zest and lime juice, shallot, Serrano and sea salt.


Cook down mashing with potato masher, leaving semi-chunky and let cool down. Add half cilantro while still warm, not hot.

Refrigerate until completely cooled. Add the other half of chopped cilantro.
Taste for seasoning. Add more salt, pepper, lime or cilantro to taste if needed. 
Serve with tortilla chips.
