Grilled Vegetables

This is one of my favorite ways to prepare veggies.
You can pair these veggies with anything. Tonight we 
paired them with steaks that were already marinated 
from the grocery store. 

Chop up the following vegetables and honestly you can easily interchange them with any vegetable you like more or have on hand.

-peeled and chopped sweet potato
-3-4 red potatoes
-red onion
-red pepper
-zucchini
-summer squash
-fresh herbs, whatever you have on hand-I had rosemary and thyme
-minced garlic

Add to grill pan and toss with olive oil, salt and pepper

Such beautiful colors!


Put them on the grill on medium heat and stirring every 10 minutes until they are tender. Should take about approximately 30 minutes.
