Lemon Cookie with Raspberry Lemon Frosting
These cookies are my favorite thing about Valentine’s Day. The
frosting is so amazing. The freezed dried raspberries make this cookie. I find
mine at Target so they should be pretty easy to find.
Ingredients
Cookie
3 Cups flour
2 tsp baking powder
1 cup sugar
2 sticks salted butter-Cold & cut into small pieces
2 eggs
1 tsp vanilla extract
Zest & Juice of lemon
Frosting
4 oz cream cheese
12 Tbsp butter
3 cups powdered sugar
3 heaping tablespoons freeze dried raspberries
1-2 Tbsp lemons juice
Directions
Preheat oven to 350*. In a mixer add butter and sugar, beat until
fluffy. It will take a few minutes and may need to scrape down the sides a few times. Add eggs, vanilla lemon juice
and zest and mix until combined. Add baking powder and flour and mix on low until combined.
Turn dough onto a floured surface. Roll the dough into about ¼ inch thickness
and cut out using a cookie cutter. Place cut outs on cookie sheet about 1 inch
apart. Bake for 10-12 minutes just until edges are brown. Remove from oven and
let cool on cooling rack completely.
Meanwhile make the frosting. In a Ziploc bag add the freeze
dried raspberries and crush them until they are a fine powder. Mix together cream cheese and butter until
smooth. Add lemon juice and powdered sugar and mix until creamy and fluffy. Add
3 heaping tablespoons of the raspberry powder. Add more lemon juice if it’s too
thick. Once the cookies are completely cooled, add the frosting. I like to keep
the cookies in the refrigerator.
