Caramelized Pork Rice Bowl
I found this recipe on Pinterest and it did not disappoint.
It was extremely easy and super delicious.
My tip is to really let the meat caramelize. You might
think it will taste burnt but that brown is flavor.
Ingredients
2 Tablespoon olive oil
1/2 onion-diced
2 teaspoons ginger-grated
2 teaspoons lemongrass-grated
2 cloves of garlic-minced
1 pound ground pork
5 Tablespoons brown sugar
2 Tablespoons fish sauce
1/2 teaspoon red pepper flakes
For serving
4 servings of white rice-cooked according to the package
Green onions-diced
Cucumber-Seeded and diced
Cherry tomatoes-quartered
Red pepper flakes
Directions
In a large skillet heat the oil over medium high heat. Add the onion, ginger, lemongrass, garlic and red pepper flakes. Saute for 2-3 minutes. Raise heat to high and add ground pork and cook, breaking into pieces until cooked through and no longer pink. Add brown sugar and fish sauce. Cook for 2-3 minutes without stirring. Stir and mix around and then cook for another 2-3 minutes. Continue that process until deep brown and caramelized.
To serve place rice and pork mixture in a bowl. Top with green onions, cucumbers, tomatoes and garnish with more pepper flakes if you like it spicier.
