Peach Crumb Bars
I found this recipe on Pinterest. They are seriously
so amazing. Josh and I almost ate an entire 9x13 pan
in 3 days. You'll notice in the picture there is glaze. I didn't include
that part of the recipe down below because I don't think it was
necessary. Instead top it with whipped cream or ice cream. Or nothing, its delicious even without anything.
Ingredients
Crust & Topping
1 cup sugar
1 teaspoon baking powder
3 cup flour
1/2 teaspoon salt
1 cup cold butter cut into pieces
1 egg
1 1/2 teaspoon vanilla extract
Filling
5 cups fresh peaches-peeled & thinly sliced (about 6 peaches)
1/2 cup sugar
4 teaspoon cornstarch
Juice of 1 lemon
Baking spray
Whipped cream or vanilla ice cream for topping
Directions
Preheat oven to 350 degrees. Line a 9x13 glass plan with tin foil and spray liberally with baking spray.
In a large bowl mix together all of the ingredients for the filling.
Set aside. In a mixer combine all the ingredients for the topping/crust. Mix on low/medium until forms into small crumbles.
Add about 3/4 of the crust/topping to the prepared pan. Press the crust into the pan. Add the filling mixture. Top the filling with the rest of the topping/crust. Bake for about 45 minutes. Until golden brown and bubbly. Let cool and serve with ice cream or whipped cream.
