Spicy Pork Noodle Bowl

This recipe is from Food Network magazine. The ingredients seem odd, especially the pickles. But trust me it was super delicious. And spicy. I added the chili sauce after taking some out for Lena. 

Ingredients
8 oz thin rice noodles
2 Tbsp vegetable oil
12 oz ground pork
1 Tbsp fresh garlic-minced
1/3 cup chicken broth
1/2 cup bread and butter pickles-chopped
1/4 cup pickle brine
1/3 cup low sodium soy sauce
2 Tbsp sesame seeds plus extra for garnish
1 Tbsp chili garlic sauce (of more if it’s not spicy enough)
2 tsp brown sugar
1 Persian cucumber-halved and thinly sliced
1 cup cherry tomatoes-chopped

Directions
Bring a large pot of water to a boil and add the noodles. Cook according to the package. Meanwhile in a large skillet, heat the vegetable oil. Add the pork. Breaking up the meat until browned. Once lightly browned add ginger, chicken broth, pickles, pickle brine, soy sauce. Bring to a boil and reduce heat. Let the sauce thicken, about 5 minutes. Add sesame seeds, chili sauce and brown sugar. Cook for another 4-6 minutes until thickened. 
To serve add rice noodles to a bowl. Top with pork, cucumber, tomatoes and sesame seeds.
