Sweet Potato & Chorizo Tacos
I've been obsessed with chorizo tacos from Chipotle
lately. So, I searched the internet for a good
chorizo taco recipe and came across this one with
sweet potatoes in it. They are delicious!
Ingredients:
1 large sweet potato
2 Tbsp olive oil
1 tsp salt
1 medium yellow onion diced
1 lb chorizo (mild or spicy depending on what you like)
1 can black beans drained and rinsed
1 bunch of cilantro
Flour tortillas
1 bunch of green onions chopped
Queso fresco cheese
2 limes cut into to wedges for serving
Basmati rice (I use the boil in a bag type)
Directions:
Pre heat oven to 400 degrees.
Peel and dice sweet potato into 1/2 inch pieces.
Put on a baking sheet with tin foil, toss with olive oil and salt.
Bake for 25-30 minutes until tender.
While the sweet potatoes roast prepare the toppings.
Chop cilantro, green onions and limes. Crumble the queso fresco.
Next add the olive oil to a skillet on medium heat and add chopped yellow onion. Saute until soft about 5 minutes or so. Add chorizo, breaking into pieces and cook for about 10-15 minutes until fully cooked. Add the cooked rice, drained and rinsed black beans and sweet potatoes.
Heat the tortillas either in the microwave or over the flame of the stove.
Assemble your tacos with the meat mixture and all the toppings.
